Wheat Rolls (or sandwich buns)

These recipes use a bread machine to make preparation easy during Ramadan. Feel free to knead the dough by hand if you prefer.

Honey-Butter Whole Wheat Rolls

 Ingredients

Dough:
  • 1 cup of whole milk
  • 1 stick of butter
  • 1/4 cup of raw honey
  • 2 eggs (lightly beaten)
  • 1/2 tsp. of salt
  • 3 1/2 cups of whole wheat flour 
  • 1 packet of active, dry yeast
 
Glaze:
  • 1 tbsp. of butter
  • 1 tsp. of raw honey
  • Dash of salt

1. In a small pot, warm the milk and butter together until the butter melts and the milk reaches 100° - 110°F. If the milk is too hot, it may cook the eggs or kill the yeast in the next step.
2. Add all the dinner roll ingredients into your bread machine according to the instruction manual (usually liquids first, then solids, yeast last). Set the machine to the appropriate cycle for preparing dough (without baking it).
3. Meanwhile, as the cycle nears completion, grease a baking sheet (or line it with parchment paper for easy cleanup), and preheat the oven to its lowest setting (*if your home is chilly).
4. Once the bread machine has processed the dough, remove the dough, and shape it into 12 rounds for sandwich buns or 15 rounds for dinner rolls. 
5. Turn the oven off. Place the rolls/buns onto the baking sheet. Place the baking sheet in the warmed oven for 20-30 minutes to allow the dough to rise again. (*If your home is warm, you may let them rise on a countertop.)
6. After the rolls have risen, remove them from the oven and set the oven to 350°F.
7. Bake the rolls for 20-25 minutes, until they are done. They will be soft but should spring back into shape when gently poked.
8. Meanwhile, in a saucepan, slowly melt the honey, salt, and butter together.
9. Remove the rolls from the oven and immediately brush them with the glaze.
10. Allow the rolls to cool, and then store them in the refrigerator to retain their freshness. Allow 24 hours to pass before warming them up in the oven to eat. Slice the buns lengthwise if you desire to use them as sandwich buns.

Jalapeño-Cheddar Whole Wheat Rolls

Ingredients

Dough:
  • 1 cup of whole milk
  • 1 stick of butter
  • 1/4 cup of raw honey
  • 2 eggs (lightly beaten)
  • 1/2 tsp. of salt
  • 3 1/2 cups of whole wheat flour 
  • 1 packet of active, dry yeast
  • 2 tsp. onion powder
  • 2. tsp. jalapeno powder (available online)
  • ​1 cup finely chopped, fresh jalapeño peppers
  • 1/2 - 1 cup sharp cheddar or smoked cheddar cheese 
 
Glaze:
  • 1 tbsp. of butter
  • 1 tsp. of raw honey
  • Dash of salt
