Spicy Smothered Beans
Ingredients:
Directions:
- 3 tablespoons of butter
- 1 sweet onion, diced
- 1 red bell pepper, diced
- 3 1/2 cups of cooked navy beans (or 2 cans)
- 1 tablespoon of onion powder
- 1 tablespoon red pepper flakes
- 2-3 teaspoons of Creole seasoning
- 1 teaspoon of smoked paprika
- 1 teaspoon of dried thyme
- 1 teaspoon of black pepper
- 2 tablespoons of flour
- 1 cup of vegetable broth
- 2/3 cups of heavy cream
- 3-4 garlic cloved, minced
- 1 bunch of parsley, chopped
- Scallions, chopped (optional)
Directions:
- Melt the butter in a large pan.
- Add the onion and red bell pepper. Cook them until they are tender.
- Add the navy beans.
- Stir in the onion powder, red pepper flakes, Creole seasoning, paprika, thyme, and black pepper. Mix well.
- Sprinkle in the flour, coating the beans. Stir and allow the flour to cook for a minute to eliminate the raw flour taste.
- Stir in the broth and cream. Stir.
- Add in the garlic and parsley. Stir and cook for 1-2 minutes.
- Plate the beans and top with the scallions.
- Serve over brown rice, couscous, or mashed cauliflower. Enjoy!
