Chocolate Zucchini Bread
Ingredients:
- 2 sticks of butter
- 1 1/4 cups of whole wheat flour
- 1/2 cup of cacao powder
- 1 tsp. of baking soda
- 1 tsp. of ground cinnamon
- 1/2 tsp. of salt
- 1 cup of raw sugar
- 2 eggs
- 1 large zucchini, grated (about 2 cups)
- 1/2 cup of chocolate chips
- Preheat oven to 350°F. Grease a muffin tin (or a 9x5 inch loaf pan).
- Melt the butter and allow it to cool slightly. Hot butter may cook the eggs during later steps.
- Meanwhile, in a large bowl, sift the flour, cacao powder, baking soda, cinnamon, and salt.
- In a different bowl, mix the sugar and eggs for about a minute, until it is combined.
- Add the cooled, melted butter and stir the mixture until everything is combined.
- Stir in the zucchini.
- Gradually mix in the flour mixture and the chocolate chips.
- Pour the batter into the loaf pan.
- Bake for 45-55 minutes, until a toothpick inserted into the center of the bread comes out clean.
- Let the bread cool for 10 minutes. Remove the loaf from the pan and place it on a wire rack to finish cooling.
- Serve after 24 hours.
